Roasted Beet and Greens Salad
I love creating salads with unexpected flavor combinations - and this one is a standout. Red beets, often overlooked are true super foods packed with nutrients and earthy sweetness that shines when roasted.

Bright and Lively
Spicy greens come alive with layers of flavor from beets, onion, goat cheese and a fresh orange dressing.
Salad Ingredients
2-3 medium beets (about 1 1/2 cups) diced, roasted*
5 oz. mixed greens or arugula, roughly chopped
1/4 cup red onion, sliced thinly
2 ounces honey flavor goat cheese
¼ cup green onion, sliced thin
Dressing
3 Tablespoons fresh orange juice
1 Tablespoon white wine vinegar
1 teaspoon Dijon mustard
¼ cup extra virgin olive oil
Salt and pepper to taste
Instructions
Prepare the dressing by mixing all the ingredients, except olive oil. Drizzle in the oil and blend thoroughly.
Make the salad by layering the arugula or greens with the red onion, roasted beets, and pistachios. Top with crumbles of goat cheese.
Drizzle on the dressing and serve immediately.
Notes: Salad can be made 2-3 hours ahead and refrigerated. Reserve the dressing until serving.
Roast fresh red beets or purchase canned or cooked red beets to save time.
