Ingredients
3/4 cup vanilla Greek yogurt (low sugar)
1/2 cup cooked red beet pieces, frozen
1/2 cup frozen pineapple chunks
3/4 cup unsweetened almond milk
Instructions
Prep the beets: Cut the red beets into small cubes and freeze ahead of time.
Add ingredients to the blender: Combine the Greek yogurt, frozen beets, pineapple and almond milk.
Blend: Blend on high speed until the mixture is completely smooth and creamy.
Serve: Pour into a glass and enjoy immediately while cold and refreshing.
Tips: Canned or vacuum sealed beets work well or your can roast fresh beets.
