Protein Packed, Simple Prep
Savory spices and lean chicken breast are slow cooked to create a simple, go-to main dish
Ingredients
2 pounds boneless, skinless chicken breast, trimmed of fat or cartilage
1 cup chicken broth, low sodium
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon smoked paprika
1 teaspoon Italian seasoning
½ teaspoon salt (optional)
½ teaspoon pepper
1 Tablespoon apple cider vinegar
Instructions (Stove top)
Prep the seasoning: In a large saucepan, mix the chicken broth with the spices, salt and pepper.
Add chicken: Lay the trimmed chicken breast in an even layer in the saucepan.
Slow cook: Cover with the lid and simmer (medium-low heat) for 1.5-2 hours, or until the chicken easily shreds.
Cool and shred: Remove from the heat and let cool briefly. Shred using 2 forks.
Season and serve: Return to the heat and add apple cider vinegar. Cook and stir until warm.
Instructions (Slow cooker)

Slow cook: Cover with the lid and cook on low for 4-6 hours, or until the chicken easily shreds.
Cool and shred: Remove from the heat and let cool briefly. Shred using 2 forks.
Season and serve: Turn on the heat and add apple cider vinegar. Cook and stir until warm.
Tips: Refrigerated cooked, cooled chicken for up to 4 days, freeze for up to 4 month.
