  • 1 cup sesame seeds, hulled

  • 1 cup whole oats

  • ¾ cup natural creamy peanut butter or other nut butter

  • ½ cup mini chocolate chips (optional)

  • 1/3 cup raw honey

  • 1 teaspoon vanilla

  • ½ teaspoon sea salt

  2. Portion bites: Scoop into 1-ounce (about 2 Tablespoon) portions and roll into a ball. Repeat until you’ve rolled all the energy bites.

  3. Chill the bites:  Store for up to 2 weeks in the refrigerator or freeze for longer storage.

Tips: Buy larger quantities of seeds through online retailers. Choose organic and raw when available. Freeze unused seeds for freshness.

If using salted seeds, omit the sea salt

Buy pre-ground flaxseed for convenience or grind yourself before adding to the recipe.  Whole flaxseed is hard to digest.
